Halloween Week {Dinner} Menu

October 29, 2012 By Stacy 4 Comments

I am going to try something new this week. I am going to PLAN {ahead of time by more than 2 hours} what we are going to eat for dinner every night this week. Reduce the number of times I have to hit the store, reduce the stress that comes over me at 4:00pm, and reduce the number of calories that we are consuming.

(that cute template I used to make the menu graphic is from Melissa Davis Designs, she is awesome)
Monday – No real recipe really – just a rotisserie chicken on a bed of salad greens with veggies, a little low-fat feta, and my favorite low calorie balsamic vinaigrette.
Tuesday – Chicken Parmigiana Burgers from Gina’s Skinny Recipes
Wednesday {Halloween} – Bobby’s Lighter Lasagna Soup although I make it with all ground lean ground turkey instead from Paula Deen
Thursday – Lemon Feta Chicken w/ Oregano also from Gina’s Skinny Recipes
Friday – Rocco’s Fettuccine Alfredo from Runner’s World which uses whole wheat pasta and greek yogurt to make the Alfredo sauce
Hopefully I can make this a series and we can share healthier recipes with each other!!
