Alberta’s Red Velvet Cake Mix Cookies

Hey everybody!! My name is Stacy and I blog about all things simple and cute over at She’s Kinda Crafty. Alberta the elf and I are SUPER excited to be sharing our simple Red Velvet Cake Mix cookie sandwiches. Alberta is kind of a lazy elf, but it’s totally not her fault – she’s got a full time job, and then 2 small elves at home, a husband that travels a lot, and the whole keeping up with my kids’ daily behavior in December and reporting back to the big man himself. That’s a LOT to keep up with so she likes to take the easy way out when baking, like using store-bought cake mix to help her make cookies.

Red Velvet Cake Mix Cookie Sandwiches:
Adapted from Duncan Hines – makes 12 sandwiches

  • Red Velvet Cake boxed cake mix
  • 1/2 cup of melted butter – cooled
  • 1 egg
  • 1-2 tsp Vanilla Extract (I tend to like more vanilla)
  • Frosting
  • Vanilla candy melts
  • Sprinkles

Preheat oven to 350. Mix the first 4 ingredients together until a soft dough forms. Roll 1″ balls of dough and place them on a prepared baking sheet. Bake for 10-12 minutes on the middle rack of the oven. Allow to cool 1 minute on the baking sheet before transferring to wire rack to completely cool.

Once the cookies have cooled, match them up so each cookie has a size twin, flip them over, and spread frosting on 1 half of each pair. Now, you are free to use any frosting you want, homemade or store bought, but Alberta is a big fan of this easy frost frosting.

After you frost the cookies, sandwich them together for a beautiful cookie sandwich.

I’m not sure if you’ve heard but elves love their cookies extra sweet with a bit of candy coating. So go ahead and melt a bunch of candy melts per the package directions and dunk those sandwiches right in that melted yummy candy coating! Then sprinkle a generous amount of any festive sprinkles you have on the coating while it is still warm. 

Oh, yeah! That’s the ticket!! As you can see Alberta is very pleased with how her Red Velvet Cake Mix Cookie Sandwiches turned out, and she did it all in about 30-40 minutes!! Now she has time to kick back, relax, and enjoy The Real Houselves of the Arctic Circle.
